3/4cuprolled oatsground in the food processor (or just use quick oats)
1/4cuppeanut butter
1/4cuphoney
1/2tspvanilla
2TBLraisinschopped coarsely
2TBLwalnutoptional, finely chopped
Instructions
Heat the peanut butter and honey for 15 seconds in the microwave in a glass bowl or measuring cup to soften. Mix with the oats, vanilla, and raisins in a large bowl until fully combined. (It will be dense and may seem sticky.)
Drop by the teaspoon onto either a plate or a baking sheet and place into the refrigerator for at least 30 minutes. After they are firm from the cold, store in a jar or other airtight container in the fridge—if they last that long! They can also be frozen.
