Texas Caviar (Bean Dip)
This easy to make recipe with excellent flavor was provided by Sue Cravillion
Ingredients
- 1 can black-eyed peas with jalapeno drained
- 1 can pinto beans with jalapeno drained
- 1 small jar chopped pimento drained
- 1 can shoe-peg corn drained (regular corn works as well)
- 1 small onion chopped finely
- 1 cup celery finely chopped
- 1 cup sweet red pepper finely chopped
Sauce
- ¼ cup cider vinegar
- 1 cup sugar
- ¼ cup vegetable oil
- 1 TBL water
- 1 tsp salt
- 1 tsp pepper
Instructions
- Combine the beans and vegetables and set aside. Combine all of the sauce ingredients and bring to a boil. Allow to cool and then pour over bean mixture and stir.
- Chill for one hour or more and serve with dipping chips.
