Texas Caviar (Bean Dip)

This easy to make recipe with excellent flavor was provided by Sue Cravillion

Ingredients

  • 1 can black-eyed peas with jalapeno drained
  • 1 can pinto beans with jalapeno drained
  • 1 small jar chopped pimento drained
  • 1 can shoe-peg corn drained (regular corn works as well)
  • 1 small onion chopped finely
  • 1 cup celery finely chopped
  • 1 cup sweet red pepper finely chopped

Sauce

  • ¼ cup cider vinegar
  • 1 cup sugar
  • ¼ cup vegetable oil
  • 1 TBL water
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Combine the beans and vegetables and set aside. Combine all of the sauce ingredients and bring to a boil. Allow to cool and then pour over bean mixture and stir.
  • Chill for one hour or more and serve with dipping chips.
