Shrimp Scampi

This recipe has been in our family since we lived in El Paso Texas in the early 1980’s. It is simple to make and tastes great.

Ingredients

  • 2 ½ pounds large fresh shrimp unpeeled (can also used thawed frozen shrimp)
  • 1 cup butter melted
  • ¼ cup olive oil
  • 1 TBL dried parsley flakes
  • 1 TBL lemon juice
  • ¾ tsp salt
  • ¾ tsp dried whole basil
  • ¾ tsp dried whole oregano
  • Hot cooked rice

Instructions

  • Peel and de-vein shrimp; place in a single layer in a 15x10x1 inch jellyroll pan. Set aside.
  • Combine next 8 ingredients; pour over shrimp. Bake at 450 degrees for 4 minutes. Broil 4 inches from heat for 2-3 minutes until shrimp are done, making sure that you don’t burn the shrimp. Serve over rice.
  • Serves 6
