Chicken in Parchment
This is Carl’s pre-marathon meal. It is fun to make with children.

Ingredients
- 1 13 inch square of parchment paper folded into a triangle
- 1 chicken breast boneless, sliced into strips
- 1 clove garlic minced
- 1 TBL olive oil
- 1 tsp balsamic vinegar
- ½ cup, total Carrots, zucchini, sweet potato, bell pepper, onion sliced thin
- 5 each kalamata olives cut in half
Instructions
- Preheat oven to 350 degrees. Fold the parchment paper into a triangle, crease and open.
- Arrange sliced chicken breast in center of parchment paper along with garlic, olive oil, balsamic vinegar, veggies, and olives. Refold parchment into triangle.
- Starting at one corner, turn over 1/2 inch edge of parchment and crease. Continue to fold along the edge to make an enclosed pocket. Place on baking sheet and bake in oven at 350 degrees for 25 minutes or until the chicken is done.
