This recipe is deceptively easy and very tasty. The 3 cups of cooked chicken breast called for in the recipe equates to about one package of Costco chicken tenders. I haven’t tried it but I suspect that Costco Broasted Chicken would be awesome in this recipe as well.
Chicken, Cornbread Bake
Ingredients
Casserole
- 3 cups chicken breast cooked, 1 inch cubed
- 1 tsp poultry seasoning
- ¼ tsp garlic powder
- 1 ½ cup sour cream
- 1 cup milk
- salt and pepper to taste
- 8 oz cheddar cheese shredded, about 2 cups
- 3 each green onion chopped (3 TBL) or regular onions
Cornbread Topping
- 8.5 oz cornbread muffin mix Honey cornbread mix good too!
- 15 oz can cream style sweet corn
- 1 egg
- 2 TBL butter melted
Instructions
- Heat oven to 400 degrees. Spray 13×9 inch (3 quart) glass baking dish with cooking spray.
- In large bowl, mix chicken, poultry seasoning, garlic powder, sour cream and milk. Season well with salt and pepper. Fold in cheese and onions. Spoon mixture into baking dish.
- In medium bowl, stir together topping ingredients just until blended. Spread batter evenly over chicken mixture.
- Bake about 30 minutes or until toothpick inserted in center of topping comes out clean. Sprinkle with additional chopped green onions, if desired.
