Chicken, Cornbread Bake

Ingredients

Casserole

  • 3 cups chicken breast cooked, 1 inch cubed
  • 1 tsp poultry seasoning
  • ¼ tsp garlic powder
  • 1 ½ cup sour cream
  • 1 cup milk
  • salt and pepper to taste
  • 8 oz cheddar cheese shredded, about 2 cups
  • 3 each green onion chopped (3 TBL)

Cornbread Topping

  • 6.5 oz cornbread muffin mix
  • 15 oz can cream style sweet corn
  • 1 egg
  • 2 TBL butter melted

Instructions

  • Heat oven to 400 degrees. Spray 13×9 inch (3 quart) glass baking dish with cooking spray.
  • In large bowl, mix chicken, poultry seasoning, garlic powder, sour cream and milk. Season well with salt and pepper. Fold in cheese and onions. Spoon mixture into baking dish.
  • In medium bowl, stir together topping ingredients just until blended. Spread batter evenly over chicken mixture.
  • Bake about 30 minutes or until toothpick inserted in center of topping comes out clean. Sprinkle with additional chopped green onions, if desired.
