Texas Caviar (Bean Dip)

This easy to make recipe with excellent flavor was provided by Sue Cravillion

1 can black-eyed peas with jalapeno - drained
1 can pinto beans with jalapeno - drained
1 small jar chopped pimento - drained
1 can shoe-peg corn - drained (regular corn works as well)
1 small onion chopped finely
1 cup finely chopped celery
1 cup finely chopped red and/or green pepper

SAUCE:
¼ cup cider vinegar
1 cup sugar
¼ cup vegetable oil
1 TBL water
1 tsp salt
1 tsp pepper

Combine the beans and vegetables and set aside. Combine all of the sauce ingredients and bring to a boil. Allow to cool and then pour over bean mixture and stir.

Chill for one hour or more and serve with dipping chips.
