Taco Casserole

This taco casserole is suprisingly easy to make, full of flavor, and somewhat healthy to boot.

1 1/2 pounds ground beef or ground turkey (we use 1 pound)
1 package Taco Seasoning Mix (or make your own)
16 ounce can pinto beans, drained and rinsed
15 ounce can tomato sauce
11 ounce can Mexican-style corn or whole kernal corn, drained
1 cup Cheddar cheese, shredded
1 cup tortilla chips, coarsely crushed
Assorted topping such as sour cream, sliced green onions, shredded lettuce, and chopped tomatoes.

Pre-heat oven to 400 degrees.  Brown ground beef or turkey in large skillet on medium-high heat.  Drain fat.

Stir in Taco Seasoning Mix, beans, tomato sauce, and corn.  Bring to boil.  Reduce heat to low; simmer 5 minutes, stirring occasionally.  Spoon into 2-quart baking dish.  Sprinkle with cheese and tortilla chips.

Bake in pre-heated 400 degree oven for 5 to 10 minutes or until cheese is melted.  Serve with assorted toppings.

This casserole can be frozen and re-heated.  Do not place the tortilla chips on the casserole if freezing.
