Stuffed Mushrooms


Yes, this recipe comes from Business Week magazine, Jan 27, 2003 issue.  It was in the issue that came out during Super Bowl week.  The article indicates that the recipe comes from Baltimore Raven's quarterback Jeff Blake's wife, Lewanna.  We first had it with the Mullens and it was a real hit.  Simple to make.

20 medium mushroom caps (I use the common white type)
8 ounces cream cheese, softened
¾ cup grated Parmesan cheese
1 small can of crab meat (the original recipe called for ¼ cup of real bacon bits)
2 cloves garlic, minced
1 cup mild cheddar cheese, shredded

1.  Preheat oven to 375.

2.  In mixing bowl, blend the cream cheese, Parmesan, crab (or bacon), and garlic.

3.  Remove the stems from the mushroom caps.  Spoon a tablespoon of the mixture into each mushroom cap.  Sprinkle cheddar cheese on top.

4.  Bake 30 to 35 minutes until mushrooms are cooked.  Serve hot.
