Peanut Butter Balls

Peanut Butter Oat Bites-No Bake

These balls are easy to make and very yummy.  We first made them with our 2 year old grandson.  He loved "helping" and eating them even more.

3/4 cup rolled oats, ground in the food processor (or just use quick oats)
1/4 cup peanut butter
1/4 cup honey
1/2 tsp vanilla
2 TBS raisins, chopped coarsely
2 TBS walnuts, finely chopped (optional)

1. Heat the peanut butter and honey for 15 seconds in the microwave in a glass bowl or measuring cup to soften. Mix with the oats, vanilla, and raisins in a large bowl until fully combined. (It will be dense and may seem sticky.)

2. Drop by the teaspoon onto either a plate or a baking sheet and place into the refrigerator for at least 30 minutes. After they are firm from the cold, store in a jar or other airtight container in the fridge—if they last that long!
