Individual Sicilian Meat Loaves

Very tasty recipe

1 egg, lightly beaten
1 14 oz jar of pasta sauce of your choice, we use this spaghetti sauce
1/4 cup seasoned fine dry bread crumbs
1/4 tsp salt
1/4 tsp ground black pepper
12 ounces ground round (or beef)
2 ounces mozzarella cheese (2 1/4 x 1 1/2 x 1 inch block)
4 thin slices prosciutto or cooked ham
Small amount of shredded Parmesan cheese

Preheat oven to 400 degrees.  In a medium bowl combine egg, 1/4 cup of the pasta sauce, the bread crumbs, salt, and pepper.  Add ground beef; mix well.

Cut mozzarella cheese block into four 2 1/4 x 3/4 x 1/2 inch logs.  Wrap a slice of prosciutto or ham around each log.  Shape 1/4 of the ground beef mixture around each cheese log to form a loaf.  Flatten the four meat loaves to 1  1/2 inches thick and place in a shallow baking pan.

Bake loaves, uncovered, in a preheated oven about 20 minutes or until internal temperature registers 160 degrees.  Meanwhile prepare fettuccine or pasta according to package directions.  Heat the remaining pasta sauce.

Arrange meat loaves over hot pasta.  Spoon sauce over top and sprinkle with finely shredded Parmesan cheese.
