Lasagna - Traditional

This recipe is from the side of the lasagna noodle box.  Well.... excpet for using the homemade spaghetti sauce.  You can buy it from the store, if you must.

1 - 16 ounce package lasagna noodles
8 ounces ground Italian sausage
8 ounces ground beef
1  1/2 TBS fresh garlic, chopped
1/2 cup yellow onion, diced
1 - 30 ounce jar spaghetti sauce
1/2 tsp salt
1/4 tsp pepper
3 cups ricotta cheese
16 ounce shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 large beaten eggs

Cook pasta accornding to package directions.  Meanwhile, in large pot, saute Italian sausage, ground beef, garlic, and onions.  When meat is cooked, drain off excess fat.  Add spaghetti sauce, salt and pepper.  Bring meat sauce to a boil, reduce heat and simmer for 15 minutes.

In a large mixing bowl, combine ricotta, mozzarella and parmesan cheeses with beatten egg, mix until smooth.

To build lasagna, layer three strips of lasagna lengthwise in greased 9 x 13 baking dish.  Spread on 1/3 meat sauce and 1/3 cheese mixture.  Repeat layering process twice.  Bake lasagna in a pre-heated 350 degree oven for 40 minutes.  Let stand 10 mintues before slicing and serving.

Serves: 9 large portions

Lasagna Wraps

We got this recipe from a local "make and take" store that is now out of business.  It is easy to put together and very tasty to boot.  This dish can also be made ahead of time and frozen.  Completely thaw in the referigerator and then bake according to the directions below.

15 oz Ricotta cheese
3 cloves garlic, chopped or minced
2 TBL fresh basil, chopped
1 tsp dried oregano
2 TBL onion, chopped
1 egg
1 Box lasagna noodles
4 oz Prosciutto ham (or other thin slided ham)
16 oz spaghetti sauce

Pre-heat oven to 350 degrees.  Boil 10 - 12 lasagna noodles according to package direction until just al dente (about 3/4 done).  Remove noodles from boiling water and place on paper towel to remove excess moisture.

Meanwhile, mix all ingredients except ham together in a bowl and mix well.

In a oven proof 9x9 pan place 1/3 of spaghetti sauce on bottom. Spead equal portions of Ricotta cheese mixture evenly leaving 1/4 inch space by all edges and place a single layer of ham on top.

Then carefully role up the noodle, ham, and cheese starting at the small end and place in the pan, seam side down.  Once all of the roll-ups have been placed in the pan spread the remaining spaghetti sauce over the top.

Bake in oven for 30 minutes.

Servings: 4 to 6
