Ham Roll-ups


This is an easy to make recipe but it takes some planning ahead for best results.

1 package flour tortilla shells
2 - 8 oz packages of cream cheese
1/3 cup mayonnaise
½ cup chopped green onions
½ cup chopped red and/or green bell peppers
¼ cup chopped green olives
¼ cup chopped black olives
Sliced ham - about 8 ounces


Remove tortillas and cream cheese from refrigerator and allow them to come to room temperature while chopping the vegetables into small pieces.  Combine and mix well the cream cheese, mayo, and vegetables.

Spread a thin layer of the mixture on a tortilla shell.  Arrange sliced ham over cheese.  Tightly roll up the tortilla.  Wrap individually in plastic wrap.  Place in the refrigerator at least 3 hours or overnight. To serve, cut into ¾ inch slices.

Serves:  about 50 ham roll-ups.
