Guacamole Dip

2 Avacado - ripe, soft to the touch
1/2 TBS lemon juice
1/4 cup diced red onion
1 clove garlic, diced
1 Roma tomato, seeded and diced small
1/2 tsp cumin
Salt and Pepper to taste

Cut the avacodo in half and use a spoon to remove the soft flesh.  Use a fork and mush it up.  It doesn't have to be completely crush, a few larger pieces is just fine.  Add the remaining ingredients and stir together.

Tomato Cream Sauce

1 tsp olive oil
1/3 cup chopped onion
2 tsp mnced garlic
2 tsp salt
1/2 tsp white pepper
1 8 ounce can tomato sauce
1 cup heavy cream
1/3 cup diced sun dried tomatoes packed in oil

Heat olive oil in skillet over medium heat.  Add the onions, garlic, salt and pepper and saute until onions are translucent.
Add the sun dried tomatoes and tomato sauce.  Saute for a minute or two.
Add heavy cream and cook until the sauce thicken slightly.
Makes about 2 cups.

Shrimp Cocktail Sauce

1 cup ketchup (or chili sauce)
1 lemon zest and juice
4 tsp horseradish
1/4 tsp Worchestershire Sauce
Hot Sauce to taste
1 tsp white sugar

Mix ingredients, let set for an hour or so for flavors to mix, and dip your shrimp in it.
