Pumpkin Bread

The excellent recipe came to us from Ellen Macco, a lady that Lori works with.  Ellen made these in small loaves and used them as Christmas gifts to co-workers.

5 eggs
1 1/4 cup vegetable oil
1 can (15 oz) solid-pack pumpkin
2 cup flour
2 cup sugar
2 pkgs (3 oz each) Cook and Serve Vanilla Pudding Mix (don't get instant)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Preheat oven to 325.  Beat eggs, add oil and pumpkin and beat until smooth.  Combine remaining ingredients in a separate bowl.  Gradually beat into the pumpkin mixture.

Pour batter into 5 greased 5" x 2 1/2" x 2" loaf pans and bake 50-55 minutes until a toothpick inserted in center comes out clean OR 2 greased 8" x 4" x 2" loaf pans and bake 75-80 minutes until toothpick inserted in the center comes out clean.

Cool 10 minutes.  Remove from pans and cool on a wire rack.

Spiced Applesauce Bread

We found this recipe on when we had an abundance of applesauce that we made. It is excellent.

1 1/2 cups applesauce
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup vegetable oil
2 eggs
3 TBL milk
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1/4 tsp salt
1/2 cup chopped pecans

1/4 cup brown sugar
1/4 cup chopped pecans
1/2 tsp cinnamon

1. Preheat oven to 350 degrees.  Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine the applesauce, sugars, oil, eggs, and milk: beat well. Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice, and salt; stir until smooth. Fold in the pecans. Pour batter into prepared loaf pan.
3. Mix topping ingredients together and spread evenly over batter.
4. Bake in preheated oven ofr 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.
