Super Salsa

I looked for a great salsa recipe for years before I found this one.  I serve it all summer and winter long and it has never failed to satisfy guests.  It even makes nice gifts.

8 cups tomatoes, peeled, chopped and drained.  Fresh or from a can
2 1/2 cups onions, chopped
1  1/2 cups green peppers
1 cup jalapeno pepper, chopped
6 garlic cloves, minced
2 tsp cumin (I think this is what really makes this a great salsa)
2 tsp black pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 can (15 oz) tomato sauce
1 can (12 oz) tomato paste

1.  Mix all ingredients together and bring to a slow boil for 10 mintues.
2.  Seal in jars and cook in hot water bath for 10 minutes.
3.  This is a medium salsa.  It can be made more or less chunky based on the size you cut the veggies into.

Serves:  Makes 7 pints
