Mashed Potato Casserole

We got this recipe from a good friend, Ann Mead.

12 medium potatoes
8 ounces cream cheese, at room temperature
1/4 cup butter
1/2 cup sour cream
1/2 cup milk
2 eggs, beaten
1/4 cup finely chopped onion
1 tsp salt
1/4 tsp black pepper

Preheat oven to 350 degrees.  Peel and cut the potatoes into 1 inch pieces.  Place into boiling water until soft and mashable (about 10 minutes).  In a large bowl, mash hot potatoes until smooth.  Cut in cream cheese and butter in small amounts.  Mix in sour cream.  In a small bowl, mix together milk, eggs, onions, salt, and pepper and then add to the potatoes mixture.  Beat with mixer until light and fluffy.

Place in a greased 9 inch round casserole.  Bake at 350 degrees for 45 minutes or until lightly browned on top.  Allow 15 minutes more in the oven with the oven turned off.

You can prepare the day before and keep in the fridge until time to warm it for serving.

Serves: 8 to 12 large servings
